Shredded Chicken & Truffle Guacamole Taco

Ingredients:

- 1 avocado

- Extra virgin olive oil

- 1 lemon, juice

- Fresh dill, chopped

- 1 tsp za’atar

- Salt + pepper

- Fresh lettuce

- 75g natural yoghurt

- 1 tsp Cajun spice

- 1 garlic clove

- 100g shredded chicken

- Parmesan, to garnish

- 1 pack hard shell tacos

- Signature Truffle Dust

Directions:

- First make the guacamole by adding the avocado, olive oil, truffle dust, lemon juice, herbs and spices to a pestle and mortar. Mix until your preferred consistency

- Next roughly chop the lettuce and add to a bowl along with a drizzle of extra virgin olive oil and lemon juice. Mix to combine

- In a separate bowl, add the yoghurt along with the Cajun spices and grated garlic. Then add the shredded chicken and mix to combine

- Assemble to taco by adding a base of fresh lettuce, topped with the shredded chicken and guacamole and finish with parmesan shavings and an extra sprinkle of truffle dust.
