Truffled Steak & Gauc Tacos
Ingredients:
- Sirloin Steak
- 2 avocados
- Extra virgin olive oil
- 2 limes, juiced
- Coriander
- Pomegranate
- Picked Red Onions
- Salt & Pepper
- 1 pack tacos
Directions:
- Prepare the Guacamole: In a bowl, mash the avocados with a fork until smooth, but leave some small chunks for texture.
- Season the Guacamole: Stir in the lime juice, coriander, olive oil, salt, pepper, and truffle dust. Taste and adjust seasoning as needed.
- Prepare the Steak: Season the sirloin steak with salt on both sides.
- Heat olive oil in a large skillet over medium-high heat. Once the oil is hot, add the steak and cook for about 3-4 minutes on each side for medium-rare, or until cooked to your desired level of doneness.
- Rest and Slice the Steak: Remove the steak from the pan and let it rest for 5 minutes before slicing it thinly against the grain.
- Warm the tortillas in a dry skillet over medium heat for about 30 seconds per side, or wrap them in a damp paper towel and microwave for about 20 seconds.
- Assemble the Tacos: Spread a generous spoonful of guacamole onto each tortilla as a base layer. Top with slices of steak, followed by pickled red onions, pomegranate seeds, and any additional toppings you like.
- Finish and Serve: Drizzle with a bit more lime juice and sprinkle with additional truffle dust. Serve with lime wedges on the side for squeezing.
