Truffle Lamb Burger With Truffle Tzatziki & Feta

Ingredients:

- 250g lamb mince

- 1 egg

- 1 tbsp oregano

- 1 tbsp za’atar

- Fresh mint, finely chopped

- Salt + pepper

- 100g natural yoghurt

- 1 tbsp extra virgin olive oil

- 1 lemon juice

- Fresh dill, finely chopped

- 1 Brioche Burger Bun

- White Truffle Oil

Directions:

- First make the burger mixture, by adding 250g lamb mince, 1 egg, 1 tbsp oregano, 1 tbsp za’atar, chopped mint, 1 tsp White Truffle oil, Salt & Pepper to a mix and mix until fully combined. Leave in the fridge for an hour

- Next, make the tzatziki, by adding 100g natural yoghurt, 1 tbsp extra virgin olive oil, 1 lemon juice, chopped mint, chopped dill, 1 tsp White Truffle Oil, Salt & Pepper and mix, then leave in the fridge until later

- Roll burger mixture into small patties and then fry in a lightly oiled frying pan on a medium – high heat. Cook for a couple of minutes on each sides

- Lightly toast the buns and then add the burger, top with the truffle-infused tzatziki, along with a sprinkle of feta
