Spiced Roasted Cauliflower & Sweet Potato Truffle Taco
Ingredients:
- 1 cauliflower
- 1 large, sweet potato
- Extra virgin olive oil
- 1 tbsp paprika
- 1 tbsp cumin
- 1 avocado
- 1 tsp white wine vinegar
- 1 lime, juice
- 20g feta
- Pomegranate pearls
- 1 pack tacos
Directions:
- Pre-heat oven to 180 degrees
- Break the cauliflower into florets and chop the sweet potato into small chunks. Add the vegetables to a bowl and drizzle with olive oil and seasoning. Mix to fully combine
- Add the seasoned vegetables to a lined baking tray and bake for 35 minutes, until just soft
- Add the avocado to a pestle and mortar, along with the olive oil, white wine vinegar, lime juice, and feta. Bash together until your preferred consistency
- Assemble the taco by adding a generous layer of avocado cream topped with the roasted vegetables and pomegranate pearls. Finished with a light sprinkle of truffle dust
