Truffled Enoki Mushrooms Toast

Ingredients:

- 100g enoki mushrooms

- Glug olive oil

- 1 tbsp soy sauce

- 1 slice of bread

- 50g cream cheese

- Sprinkle of oregano

- Seasoning – salt and pepper 

- White Truffle Oil

Directions:

- Add the cream cheese to a bowl and season with salt, pepper and oregano. Set aside in the fridge until later

- Trim the roots off the enoki mushrooms and tear into small bunches

- Add  the olive oil to a frying pan on a medium heat and add the enoki mushrooms. Cook for one minute

-Add a splash of soy sauce along with a drizzle of White Truffle Oil, and continue cooking for a couple of minutes

- Toast your bread & spread generously with the oregano cream cheese and top with the sautéed enoki mushrooms and finish with fresh oregano leaves
