Truffle Tomato and Pancetta Gnocchi
Ingredients:
- 100g Pancetta
- Handful Sundried Tomato
- 150g Double Cream
- Handful Spinach
- 1 Garlic Clove
- 250g Fresh Gnocchi
- 50g Parmesan Cheese
Directions:
-Start by dicing your garlic and sundried tomatoes and put to one side.
- Add your pancetta to a heated pan with a splash of olive oil and cook for 4-5 before adding your garlic and tomatoes and cooking got an additional 2-3 minutes stirring regularly.
- Add your spinach, some salt and pepper and give everything another mix until your spinach starts to wilt. Meanwhile, bring a saucepan of salted water to boil.
- Add your cream and 25g grated parmesan mixing to combine all. Whilst this is heating through, cook your gnocchi as per the pack instructions.
- Add the gnocchi to the sauce along with a few shakes of Truffle Guys Truffle Dust and mix once again.
- Plate this epic ’ness and to complete the masterpiece, further shower the dish with some more Truffle Guys Truffle Dust and the rest of the grated parmesan cheese. This dish is UNREAL, even if we do say so ourselves!
