Truffle Potato Gratin

Ingredients:

- 1.5kg maris piper potatoes

- Signature Truffle Dust

- 300g double cream

- 150g whole milk

- 3 cloves garlic 

- 100g brie

- Pinch of nutmeg 

- 125g cheddar 

Directions:

-Preheat the oven to 180c. Peel the potatoes and thinly slice with a mandolin.

- Add to a large bowl along with the cream and milk. 

- Grate in the garlic and add little pieces of the brie. Add a pinch of nutmeg and a big pinch of truffle dust and season with salt and pepper. 

- Transfer the potatoes to a baking dish, making sure to spread them evenly. When all the potatoes in the dish top up with a little of the remaining cream cream mix then cover tightly with foil. 

- Place in the oven for 1 hour 30 minutes before removing the foil grating over the cheddar cheese and returning to the oven for a further 15 minutes. 

- Allow to stand for at least 5 minutes before shaking over some more truffle dust and serving.
