Truffle Mustardy Potatoes

Ingredients:

- 500g Jersey Royal new Potatoes (serves 2)

- Parmesan Cheese

- Flaked Sea Salt

- Chives

- 1 Tbsp Gourmet Truffle Mustard

Directions:

- You can use an oven or an air fryer for this recipe. If an oven, place your potatoes onto a baking tray and into the oven at 180 degrees for 35 minutes, turning halfway through. For an air fryer cook, heat your air fryer for 3 minutes before putting the potatoes into the tray and cooking on high for 12 minutes, again turning halfway through.

- Whilst your potatoes are cooking, grate around 100g of parmesan and chop your chives.

- When your potatoes are crispy and piping hot, add them to a mixing bowl along with 1 tablespoon of Truffle Guys Gourmet Truffle Mustard, half your chopped chives, half your grated parmesan and a pinch of flaked sea salt – give everything a good mix and ensure the potatoes are coated well.

- Plate your potatoes and sprinkle over the remaining parmesan and chopped chives to enjoy the most glorious plate of epicness.
