Truffle BBQ Chicken Thighs

Ingredients:

- 1kg boneless and skinless chicken thighs

- Homemade dry rub consisting of 1 tsp of sugar, salt, pepper, cayenne, cumin, garlic powder, smoked paprika and chilli powder)

- 2 x Limes

- Chives

- Smokey Truffle BBQ Sauce

Directions:

- Put your chicken thighs in a large mixing bowl, add your dry rub and evenly coat the thighs allowing the flavours to infuse for at least an hour.

- Heat your BBQ and cook your thighs for 10 minutes, turning every couple of minutes.

- Brush one side of your thighs with the Smokey Truffle BBQ Sauce and turn to face the flames, repeat this process until your thighs are cooked thoroughly, but crisp and tender .

- Remove from the heat and place on a chopping board to cool for no longer than 5 minutes. Whilst this is cooling, it is a good time to chop your chives. 

- Delicately slice your thighs into 1-2cm thick cut strips and place on a serving plate. 

- Finish this simple, but delicious dish with a generous shower of lime juice and your chopped chives to complete the job, now enjoy and be prepared to wish you made an even bigger portion!
