Truffle Mac & Cheese
Ingredients:
- 250g (approx) macaroni
- Knob of butter
- 1 garlic clove, crushed and finely chopped
- 50g plain flour
- 500ml milk
- 250g cheddar, grated
- 50g crispy fried onions
Directions:
- Pre-heat the oven to 180
- Cook the macaroni in a saucepan filled with boiling water for 10 minutes. Drain the macaroni and set aside until later.
- Add the butter to a pan on a medium heat, along with the garlic and mustard. Cook for a couple of minutes, then stir in the flour and continue cooking for a couple of minutes
- Gradually whisk in the milk and 200g cheese and cook for a further 5-10 minutes, until it resembles a thick, creamy béchamel sauce
- Add the macaroni to the béchamel sauce and stir until fully combined. Then add a drizzle of white truffle oil and continue mixing until combined
- Transfer to an oven-proof dish and top with the remaining 50g cheese and crispy fried onions. Bake for 10-15 minutes until golden
