Truffle Crab Linguine
Ingredients:
- 250g dried linguine
- 100g crab meat
- 2 cloves garlic, chopped
- Good pinch of chilli flakes
- 1 lemon
- Handful of chopped parsley
Directions:
- Cook the pasta in boiling salted water while you crack on with the sauce.
- To a large sauce pan add enough olive oil to cover the base of the pan. It will look like a lot but this is what emulsifies with the pasta water to make the sauce. Heat the oil and add the garlic and chilli flakes and cook for 1 minutes before adding the crab. Stir everything together and allow to cook for a few minutes.
- When the pasta is cooked transfer it to the crab along with the juice of half a lemon and the parsley. Loosen with pasta water, season with salt and pepper and toss everything together. Finish with a good amount of truffle oil then serve.
