Truffle Fried Chicken Burger

Ingredients:

- 300ml buttermilk

- 2x brioche bun

- 150g flour

- 2 tsp paprika

- 1 tsp cayenne

- 2x chicken thighs

- Iceberg lettuce

- 1 tomato

- Iceberg lettuce

- Ultimate Truffle Mayo

- Black Truffle Hot Sauce

Directions:

- Begin by lightly bashing out the chicken thighs so they are an even thickness but not too thin then set aside.

- To a bowl add the buttermilk and half the truffle hot sauce then add the chicken thighs and leave to marinade for at least 1 hour or ideally overnight.

- Next whisk together the flour, garlic powder and paprika along with a good pinch of salt and pepper.

- Take your chicken out of the butter milk and place in the flour and scrunch with your hands, this will make sure you get the maximum amount of crunchy bits when you deep fry.

- Fill a large pan with a couple of inches of oil and when it reaches a temperature of 170c drop the chicken and deep fry for 5 minutes or until crispy and cooked through.

- To assemble the burger, toast the brioche buns and spread a thin layer of truffle mayo on the bottom then some iceberg lettuce, a couple slices of tomato then the fried chicken.

- Toss over a liberal amount of truffle hot sauce and place on the top bun.
