Truffle Chicken Parm
Ingredients:
- 1 small onion, diced
-2 cloves garlic, minced
- 1 pinch chilli flakes
- 1 tin chopped tomatoes
- Handful of basil
- 2 chicken breasts, butterlfied
- 100g plain flour
- 2 eggs, beaten
- 100g panko bread crumbs
- 1 ball of mozzarella
Directions:
- Begin with making a simple tomato sauce. Fry the onion in a little olive oil for 5 minutes before adding the garlic and chilli flakes and cooking for a further couple of minutes. Tip in the tomatoes and allow to gently cook while you prep the chicken.
- Next season the butterflied chicken breasts with salt and pepper and then coat in flour, then the egg and finally the bread crumbs.
- Fry the chicken in a large pan with half an inch of oil until golden brown and cooked all the way through. You may have to do this one at a time depending on the size of your pan.
- Next, preheat the grill to high. Place the chicken on a baking tray and top with the tomato sauce. Tear over the mozzarella then place under the grill and cook until the cheese has melted and started to brown.
- Plate up with chicken and finish with a good drizzle of olive oil and plenty of truffle dust.
