Plant-Based Truffle Tagliatelle

Ingredients:

- 150g Tagliatelle

- 3 handfuls of Chestnut Mushrooms

- 2 tsp Plant-Based Crème Fraiche (we used Oatly)

- 1 cup Baby Leaf Spinach

- 1 tsp Olive Oil

- 1 Spring Onion

- 2 Garlic Cloves

- Fresh Parsley

- White Truffle Oil

Directions:

- Roughly slice your mushrooms to 1cm in thickness.

- Peel and finely dice your garlic cloves, spring onion as well as chopping your parsley.

- In a frying pan, add 1 tsp of olive oil together with the chopped garlic and fry on a high heat.

- After 30 seconds add your sliced mushrooms and sliced spring onions before giving it a mix. Cook for 2 minutes.

- Turn down the heat low and add both the crème fraiche before giving it all good mix.

- Whilst your mix is cooking, heat your water in a pan and add your tagliatelle.

- Once your pasta is ready, grab the pasta direct from the boiling water and place into your pan bringing over some of that pasta water in the process.

- Give everything a good mix before adding in a quick pour of the White Truffle Oil and spinach.

- Mix everything thoroughly and plate up.

- Once plated, add another pouring of White Truffle Oil and chopped parsley to garnish.
