Trufflin' Egg Fried Rice

Ingredients:

- 1 pack precooked rice

- Leftover chicken

- 1/2 carrot 

- 4 spring onions 

- Handful of peas

- 1 tsp sugar 

- 1 tbsp soy

- 1 tsp vinegar 

- 1 clove of garlic, minced

- 1 tsp grated ginger  

- 1 egg

- 1.5 tsp Black Truffle Hot Sauce

Directions:

-Begin by finely dicing the carrot and chicken and slicing the spring onion, separating the whites from the greens.

- To make the sauce simply mix together the sugar, soy, vinegar, hot sauce, garlic and ginger. 

- Add 1 tbsp of vegetable oil to a large frying pan set over a high heat. Add the carrot and cook for 2 minutes before adding the chicken, peas and the whites of the spring onion.

-Next add the rice and toss well to combine. Pour over the sauce and stir fry for a couple of minutes.

-To serve, top with a fried egg and sprinkle over the rest of the spring onions.
