Vegan Truffled Hasselbacks

Recipe

Ingredients:

- Maris Piper Potatoes

- Olive Oil

- Vegan Cheddar

- Chopped Parsley

- Truffle Guys Pink Himalayan Truffle Salt

Directions:

- To prep the hasselback’s we turned to a famous TV chef Mr. Oliver for some inspo. Line up two wooden spoons either side of the potato and carefully cut down on the potato until you reach the wooden spoon. Repeat this process across the entire potato leaving around half a centimetre between each slice.

- Add the potatoes to a baking tray and drizzle over a generous amount of olive oil. Use your hands to mix and to ensure the potatoes are fully covered as this will give you that extra crispy finish we are after.

- Roast the potatoes at 180 degrees for 45-50 minutes.

- Remove the potatoes from the oven and generously grate your vegan cheese over the potatoes until they are mountain covered. Add back into the oven for a further 10 minutes.

- Remove the potatoes once again and get your strong hand on. Grind the Truffle Guys Pink Himalayan Truffle Salt until you have showered each potato with some truffle magic. Sprinkle some chopped parsley and serve.
