Truffle Pesto Pasta With Truffle Dust Breadcrumbs

Ingredients:

- 70g Basil

- 20g Pine Nuts

- 20g Parmesan

- 1/2 Clove Garlic

- 250g Rigatoni

- 2 Slices of Bread

- 20g Parmesan

- Lemon

- 50ml white Truffle Oil

- Signature Truffle Dust

Directions:

- For the bread crumbs, pulse the bread in a food processor with 20g Parmesan and a drizzle of olive oil. Season with salt and pepper then place in an oven set 180c for 5 - 10 minutes or until dried and slightly brown. When out of the oven, sprinkle over some truffle dust and set aside.

- To make the pesto simple add all the ingredients to a food processor minus the White Truffle Oil and pulse until a paste forms. Slowly add the White Truffle Oil, pulsing as you go until you have reached your desired consistency. Season with salt and pepper and set aside.

- Cook the pasta to packet instructions then drain and toss through the pesto. Add a squeeze of lemon and some more White Truffle Oil if needed and season with salt and pepper. Divide the pasta between two plates and top with the bread crumbs before serving.
