Truffle Mustard Mash

Ingredients:

- 1kg maris piper potatoes

- 50g butter, cubed

- 50ml milk

- Chopped parsley

- 1 tbsp Truffle Mustard

- White Truffle Oil

Directions:

- Begin by peeling and cutting the potatoes into equal sized pieces then place in a pan of cold water with a good pinch of salt.

- Bring the pan to the boil then place over a lid and cook for 20 minutes or until the potatoes are cooked through and tender.

- When the potatoes are cooked, drain them and let them steam dry before passing them through a potato ricer and back into the pan. If you don’t have a potato ricer you can just mash them.

- Next add the butter and milk and stir vigorously with a wooden spoon to combine. Add the mustard and season with salt before serving.

- Top with chopped parsley & a drizzle of White Truffle Oil to finish.
