Truffle Mustard Cuban Sandwich

Ingredients:

- 1 pork loin

- 1 orange

- 1 lime

- 1 tsp paprika

- 1 tsp oregano

- 1 tsp cumin

- 3 cloves of garlic

- 3 cuban bread roll or ciabattas

- 9 slices smoked ham

- 9 slices Swiss cheese

- A few sliced gherkins

- Butter

- Gourmet Truffle Mustard

Directions:

-Begin by making the pork marinade. Finely chop the garlic and add to a bowl along with the zest and juice or the orange, the juice of the lime and the spices. Season with salt and pepper before rubbing all over the pork and allowing the marinate for 1 hour.

-To cook the pork, preheat the oven to 200c and place the pork on a baking tray and into the oven to cook for 35 minutes. Remove from the oven and allow to rest before thinly carving.  

- To assemble the sandwich cut the breads in half and spread a generous amount of truffle mustard on the bottom layer. Top with slices of the pork, 3 slices of ham and 3 slices of cheese before adding the pickles and placing the lid on top. Repeat on all three sandwiches.  

- Heat a griddle pan to a medium heat. Spread a little butter over both sides of the sandwiches then toast in the pan until deep bar marks have formed. About 3/4 minutes per side.  

- Cut the sandwich in half on an angle then serve with more truffle mustard. Enjoy
