Truffle Macaroni Cheese
Ingredients:
- 300g Macaroni
- 60g butter
- 45g plain flour
- 870ml whole milk
- 200g grated Gouda cheese
- 200g grated mild Cheddar cheese
- Chopped chives, to garnish
Directions:
- Preheat the oven to 425°F (220°C).
- Bring a large pot of salted water to a boil. Add the pasta and cook for 1 minute less than the package instructions. Drain and set aside.
- In a large saucepan over medium-high heat, melt the butter. Add the flour and whisk well to form a roux. Cook for about 1 minute, stirring constantly.
- Gradually whisk in the milk and bring to a gentle simmer. Reduce the heat and cook, stirring frequently, until the sauce has thickened.
- Add half of the cheeses, a handful at a time, stirring well between each addition until fully melted and smooth.
- Stir in the minced truffles until evenly incorporated.
- Add the cooked pasta and stir until well coated with the cheese sauce.
- Transfer the mixture to a baking dish and top with the remaining cheese.
- Bake for 15–20 minutes, or until the cheese is melted and golden brown. For extra browning, place under the broiler for 1–2 minutes at the end of cooking.
- Garnish with chopped chives and serve immediately.
