Truffle Honey & Chilli Roast Potatoes

Ingredients:

- 1kg potatoes

- Gourmet Truffle Honey

- Vegetable oil

- Pinch of chilli flakes

Directions:

-Begin by peeling and cutting the potatoes. Add them to a pan of water, season with salt then bring to the boil. Once boiling, cook for 10 minutes or until almost cooked through.

- Carefully remove with a slotted spoon and allow to dry on kitchen towels. 

- Preheat the oven to 220c. Place a deep rimmed baking tray in the oven with enough vegetable oil to cover the bottom and allow to heat for 10 minutes. 

- Remove from the oven and carefully place in the potatoes before basting them with the hot oil. Place the potatoes into the oven and allow to cook for 45minutes turning half way through.  

- When the potatoes are cooked, drain them on paper towels before adding to a bowl seasoning with salt and pepper. Drizzle over truffle honey to taste then add a pinch of chilli flakes. Toss well and then serve.
