Truffle Eggs Benedict

Ingredients:

- 2 x Fresh Eggs

- Signature Truffle Dust

- 3 x Egg Yolks

- 1 x English Muffin

- 2 x Streaky Bacon

- ½ Cup Butter

- 1 x Whole Lemon

- 1 tsp Dijon Mustard

- Pinch Cayenne Pepper

- Salt & Pepper

- Fresh Chives

Directions:

-Fry streaky bacon until crisp and turn off heat and leave in the pan

- To make the Hollandaise, melt ½ cup of butter in a microwave. Combine the egg yolks, lemon juice, Dijon, salt and cayenne pepper into a bowl and whisk vigorously

- Add your mix to a saucepan on a low heat and continuously whisk. Whilst whisking, slowly add your melted butter a little at a time until fully combined. Add a few shakings of Truffle Guys Signature Truffle Dust and keep mixing

-Cut muffins in half and grill them until lightly toasted
