Truffle Cauliflower Cheese
Ingredients:
- 2 Cauliflowers
- 25g Unsalted Butter
- 25g Plain Flour
- 300ml Whole Milk
- 30g English Mustard
- 100g Cream Cheese
- 25g Parmesan Cheese
- 125g Fresh Mozzarella
- 70g Cheddar Cheese
- 30g Crispy Onions
Directions:
-Peel your cauliflower and slice them into 1cm thick steaks.
-To a pan add your butter and flour and mix to start your roux. Slowly add your milk stirring regularly.
- Add the mustard and cream cheese and give everything another stir.
- Next freshly grate your parmesan cheese into the pan along with your White Truffle Oil and give everything another mix, you have now formed your truffle cheese sauce.
- In a small baking tray, add a layer of truffle cheese sauce, a layer of cauliflower and repeat the process to create your layers until the baking tray is full to the brim.
- Now time to load it up... add your grated cheddar and torn mozzarella as well as your crispy onions.
- Add to a pre-heated oven at 160 degrees and bake for an hour.
- Remove from the oven, allow to cool and enjoy.
