French omelette with truffle dust

Ingredients:

- 2 eggs 

- Chopped chives 

- Chopped tarragon  

- Chopped parsley 

- 1/2 tbsp butter

- Signature Truffle Dust

Directions:

- Crack your eggs into a bowl and whisk well. Chop the herbs, add them to the eggs and stir to combine. 

- Take a 7inch non-stick pan and place over a medium high heat with the butter. If you only have bigger pans, use three eggs.

- When the butter is hot and foaming, tip in the eggs and begin to quickly move the pan in a circular motion while stirring the eggs with the back of the fork. You are aiming to create the smallest curds possible.

- Season the egg with salt here. After a minute or so, when the egg in the centre is still fairly runny, gently fold in one edge of the omelette then fold the other edge over to create a seal.

- Tip the omelette onto a plate then finish with a good sprinkle of truffle dust.
