Truffle Bang Bang Shrimp
Ingredients:
- 300g raw prawns
- 300ml buttermilk
- 1 egg
- 150g cornstarch
- 120g mayonnaise
- 2 tbsp sweet chilli sauce
- 1 tbsp honey
- Spring onion to garnish
Directions:
- Start by setting a large pot on the heat with a few inches of vegetable oil and slowly bring up to temperature.
- While the oil is heating up add the butter milk and egg to a bowl and whisk to combine. Add the prawns and mix everything together.
- Place the cornstarch on a plate and one by one coat the prawns with the cornflour, making sure to leave no wet spots.
- To make the spicy mayonnaise simply mix together the mayo, sweet chilli, truffle hot sauce and honey then season with salt and pepper.
- When the oil is hot enough to fry the prawns in batches, they should only take a minute or so to cook and go golden brown.
- When all the prawns are cooked, add them to a bowl and pour over the spicy mayo and toss well.
- Serve with some chopped spring onion and enjoy.
