Loaded Truffle Hot Dog Fries

Ingredients:

- 250g fries

- 6 hot dogs

- 4 banana shallots (or just used shop-bought crispy onions)

- 2 dill pickles, sliced

- Jalapeños

- Gourmet Truffle Mustard

- Royal Truffle Ketchup

Directions:

- Begin by slicing the shallots into thin rings and placing them in a small saucepan. Cover them with vegetable oil and set over medium-low heat. Cook them for 20 to 30 minutes and when they are just turning golden brown remove them with a slotted spoon and place them on paper towels. Season with salt and allow to cool.

- Cook the fries according to the packet instructions. Meanwhile, slice the hotdogs into cm chunks and fry in a little oil until golden brown and slightly crispy.

- Season the fries then place them on a plate and top with the hot dogs, crispy shallots, pickles, jalapeños and finally the truffle ketchup and mustard. To get those classic hot dogs sauce lines, place the sauces in squeezy bottles and squirt zigzags all over the fries.
