Truffle & Nduja Carbonara Twist

Ingredients:

- 3 x Egg Yolks

- Signature White Truffle Oil

- Signature Truffle Dust

- 200g Dried Spaghetti

- 50g Parmesan Cheese

- Salt and Pepper

- 2 tbsp Nduja

Directions:

-Bring your saucepan of salty water to boil and add your spaghetti and cook until al dente.

- Begin with adding your Nduja to a heated pan and allow to cook on a high heat whilst constantly stirring for one minute. Reduce the heat and keep stirring from time to time.

- In a bowl, add your egg yolks, grated Parmesan cheese, salt and pepper and Truffle Oil. Give everything a good mix to formulate a paste.

-Add your cooked spaghetti to the pan of cooked Nduja and give everything a good mix and make sure you coat the spaghetti evenly. Keep back a cup of the starchy water.

- Keeping everything on a low heat, add your truffled egg and cheese paste to the pan and give everything a mix until evenly coated. Add some of your starchy water whilst mixing to loosen up the spaghetti.

- Plate your creation and then shave some Parmesan over the top as well as some magical Truffle Dust to further enhance the deep earthy twist on this dish. Your pasta game has now gone to new levels.
