Truffle BBQ Pork Belly Burnt Ends

Ingredients:

- 1.5kg pork belly with skin removed

- Smoky Truffle BBQ Sauce

- 1tbsp brown sugar

- 1 tbsp paprika 

- 1 tsp cayenne 

- 1 tsp garlic powder

- 1 tsp salt 

- 1 tbsp honey 

Directions:

- Preheat the oven to 140C

- First mix together all the spices in a small bowl and set aside.

- Next take the pork belly and cut into 1/12 inch cubes and add to a big bowl. 

- Pour over 1 tbsp of olive oil then add the spice rub. Massage the spices into the pork belly until everything is evenly coated.

- Place the pork on a wire rack set over a baking tray and place in the oven for 3 hours. Every hour take the pork out and spritz it with a little water.

- The pork is ready when completely tender and juicy.

- Next transfer the pork to a small baking dish and pour over the truffle bbq sauce and honey. Mix everything together and return to the oven for 20 minutes. 

- Finish with an extra brushing of truffle bbq sauce and serve.
