Truffle Halloumi Pesto Ciabatta Rolls

Ingredients:

- 40g Pine nuts

- 80g Basil

- 50g Parmesan Cheese

- 3 Garlic Cloves

- 120ml Extra Virgin Olive Oil

- Rocket

- Salt & Pepper

- Ciabatta Rolls

- Halloumi

- Truffle Guys Signature White Truffle Oil

- Truffle Guys Gourmet Black Truffle Honey

Directions:

- For the homemade pesto, Toast the Pine Nuts in a dry pan, stirring constantly, until they’re golden brown,. Add to a food blender along with the Basil, Parmesan Cheese, Garlic Cloves, Extra Virgin Olive Oil and Salt & Pepper. Blend for about 30-60 seconds until its a smooth consistency.

- Pour the mixture into a bowl and drizzle in Truffle Guys Signature White Truffle Oil

- Lightly Fry Sliced Halloumi until golden brown

- Warm up 2 Ciabatta rolls under the grill to toast

- Spread thin layer of the homemade Truffle Pesto onto the base of the Ciabatta

- Layer in 3 slices of Halloumi for each roll
