Grilled Halloumi & Mandarin Truffle Salad

Ingredients:

- 1 Block of Halloumi

- 1 tbsp White Truffle Oil

- Gourmet Truffle Honey

- 2 De-skinned Mandarins (available in large supermarkets)

- 4 Handfuls Rocket Leaves

- 2 tbsp Olive Oil

- 80g Pomegranate Seeds

- 2 tbsp Pumpkin Seeds

- 1 Fresh Red Chilli 

- Half Lemon 

- Salt & Pepper 

Directions:

- Start off by heating a pan with a splash of olive oil. Slice your Halloumi into 1cm thick slabs and place them in the pan and cook for 3-4 minutes each side until lightly browned and crisp.

- To make the dressing, add 1 tbsp Truffle Oil, 1 tbsp Truffle Honey, a squeeze of half a lemon and salt and pepper to a bowl and mix to form your dressing

- To plate, add your leaves and place your de-skinned mandarin pieces and grilled halloumi evenly. Sprinkle over some pomegranate seeds, pumpkin seeds and sliced fresh chillies

- Give that salad the downpour it deserves of your sweet and tangy truffle dressing before consuming all in 0.5 seconds.
